Cucumber Canapés – festive appetizer

I followed this recipe to made these little Canapés for a holiday dinner with friends and they both looked awesome and tasted great. Easy to make, they are the perfect appetizers for any party!
6 ounces good feta, crumbled
2 ounces cream cheese, at room temperature
2 tablespoons freshly squeezed lemon juice
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/3 cup olive oil
2 large cucumbers, sliced
Sun-dried tomatoes, drained and chopped
1/2 cup fresh basil, chopped
How to prepare the Canapés:
- First, make the whipped feta: Place the feta and cream cheese in the bowl of a food processor fitted with the steel blade. Pulse until the cheeses are mixed. Add the lemon juice, 1/2 teaspoon salt, and 1/4 teaspoon pepper and turn on the food processor. Slowly add the olive oil in a steady stream through the tube. When it looks smooth, stop the processor.
- Prepare the Canapés: Place a dollop of whipped feta in the center of each cucumber slice. Top with tiny pieces of sun-dried tomatoes and fresh basil. Store in the fridge.
- Serve & Enjoy fresh.
