Quick & easy Gazpacho soup recipe

If you aren’t one of these “cold soups skepticals”, then you’ll love this fresh and summery gazpacho soup. Easy and quick to make, it will brighten your day and bring a taste of Spain to your table.



  • 4 ripe tomatoes (although you can do it with canned tomatoes too I think)
  • 1/2 a cucumber (peeled)
  • 1 onion (cut in half)
  • 1 garlic clove
  • 2 table spoons of olive oil
  • Tabasco or cayenne to spice things up a bit
  • 1/2 a tea spoon of sugar
  • salt & pepper
  • 1/2 teaspoon balsamic vinegar
  • Basil leaves (optional)

How to prepare:

Chop everything, throw in the blender and blend until smooth. Can’t be any easier!
Refrigerate until well chilled.

Add a little bit of balsamic vinegar and chopped basil leaves when serving.


Consider other toppings like black olives, and fresh mint if you have.
