Watermelon Salad for summer

This super refreshing watermelon and goat cheese salad is perfect for a hot summer day. It may sound surprising if you’ve never tried it before but the saltiness of the cheese mixes really well with the sweetness of the watermelon. I recommend choosing a really dry goat cheese but that’s quite strong so if you’re not big on smelly cheese, maybe swap that for some feta. It’s just as a good although a bit softer.



  • 1/4 Watermelon
  • 1 small Goat cheese crottin (or a 1/2 pack of feta)
  • Fresh mint leaves
  • Olive oil
  • Balsamic Vinegar (the thick reduction if you have some)
  • Salt

How to prepare it:

  1. Cut the watermelon and the goat cheese in cubes and place in a large salad bowl.
  2. Add a drizzle of olive oil, balsamic vinegar, a pinch of salt and the chopped mint and toss gently to coat. Taste and adjust seasoning as needed.
  3. Keep in the fridge for 1 hour before serving if you can.


This salad is a great side to a meal or a BBQ, or it can be a light lunch in and of itself.
